Summertime Salmon Salad

I know, it’s been a long time since I posted – Sorry!!

This summer has been crazy – I’ve now been at my new job three weeks and am just getting into the swing of things. I’m planning to back to regular posting asap!

First I have a wonderful and easy summertime salad to share with you. When we made it, we used the grill for the salmon, but it works just as well to fry it quick on the stove. The recipe is so simple but makes use of all the great produce available right now. And in interest of cutting down time in the kitchen and spending more time outdoors, we used store bought dressing to top our salads (my favorite is Newman’s Own Lite Sesame Ginger Dressing) Thanks momma for sharing this wonderful meal with me 🙂


Summertime Salmon Salad with Goat Cheese

serves two


2 salmon filets of desired size

1 1/2 cup chopped white mushrooms

1 cup halved cheery tomatoes

1 cup shredded purple cabbage

1 cup chopped cucumbers

1/2 cup goat cheese

4 cups spinach

2 cups arugula

olive oil

salt and pepper

dressing of choice



Preheat your grill and rub salmon filets with olive oil and a little salt and pepper. Grill for about ten minutes (5 each side) until the salmon is cooked.

Meanwhile, prepare the salad by chopping all of your veggies. Divide the spinach and arugula between two large plates or bowls and top with veggies. Add goat cheese and top with the cooked salmon.

Dress with your favorite dressing and more salt and pepper if desired. Best enjoyed outdoors 🙂



Pineapple BBQ Salmon Burgers

Sorry for the silence! I know it’s been a while, but I’m back to posting – starting with this delicious salmon burger recipe.

I know most of my posts have been vegan, with the occasional egg or cheese ingredient. However I do eat fish as well – I’m a pescatarian. I try to eat fish about once a week to add more nutrients to my diet. Making the transition from being a vegetarian to eating fish was hard, but as I tried more and more fish I was able to accept it. It helps to have amazing recipes like this. This burger is easy to make (especially if you have a food processor), so delicious, and healthy!


Pineapple BBQ Salmon Burgers

serves two


1/2 cup BBQ sauce (we used Bone Suckin’ – I highly recommend it)

2 TBSP pineapple juice (we used juice from the pineapple used for garnish)

2 TBSP lime juice

2 TBSP chopped cilantro

dash of salt

sprinkle of cayenne powder (or more if you like spicy!)

3/4 pound raw salmon

1/4 cup panko bread crumbs

2 tbps grated parmesan cheese

2 buns (we used a ciabatta roll and a whole wheat roll)

sliced gouda cheese

guacamole (we used store bought, but make your own or just used slices avocados)

2 rings of pineapple

Combine the BBQ sauce, pineapple juice, lime juice, cilantro, salt and pepper and mix well to combine. Set aside to use later.
Remove the skin from the salmon and add to the bowl of a food processor and pulse to grind up salmon. If you don’t have a food processor you can do this part with your hands, it’s just more messy. Remove salmon from the food processor and place in a bowl. Add breadcrumbs, paremesan cheese, and 2 tbsp of the pineapple BBQ sauce (the rest is for serving). Mix until combined.
For two equally sized burgers (they’ll be pretty big, I hope you’re hungry!).
Heat a skillet on medium heat, spray with cooking spray or add a little oil. Cook burgers about 4 minutes on each side or until golden brown. If concerned whether of not they are cooked through, slice a burger and check the middle.
Remove burgers from heat, place on a bun, and top with gouda, pineapple ring, and guacamole. Finish with a drizzling of the remaining pineapple BBQ sauce and enjoy!
