Vegan Blueberry Pancakes (Healthy)

Nothing says the weekend like pancakes. And nothing says winter like blueberries! Just kidding… I wish blueberries were in season. But if you need a little taste of July, make these pancakes, put your chair really close to a sunny window, close your eyes, and you can pretend 🙂


Vegan Blueberry Pancakes


1/2 cup rolled oats

1/2 cup oat flour (or just use another half cup oats)

1/2 cup whole wheat flour

1 tbsp baking powder

1/2 tbsp cinnamon

1/2 tbsp vanilla extract

1 mashed banana

1 1/2 cup unsweetened almond milk

sweetener to taste (brown sugar or truvia works well)




Combine all dry ingredients in a large bowl. In a smaller bowl, mash banana and add in almond milk and vanilla. Add wet ingredients to dry. Stir well. Taste and add more sweetener if desired (but keep in mind the blueberries add sweetness!)

Heat a nonstick skillet on medium heat and pour about 1/4 cup of batter into pan. Add blueberries on top. Cook for about 3 minutes on each side (depending on your stove heat). Remove and enjoy! Delicious with maple syrup or peanut butter!
