Spicy Wonton Soup

Polar Vortex round two… How is that even possible? Since going outside without strict necessity is not going to be happening, I recommend this soup. Spicy and warm. That’s all I need.


Spicy Wonton Soup

serves 3


1 package wonton wrappers (you will not need them all)

1/2 a block of firm tofu

3 cloves garlic

1 tbsp grated ginger

2 tbsp chopped fresh cilantro

2 tsp rice vinegar

1 tbsp soy sauce

1 tsp worcestershire sauce

1 tsp sriracha

1/2 tsp red pepper flakes

4 cups vegetable broth (1 carton)

1 tsp minced garlic

1 red bell pepper

1 bunch scallions

1/8 cup chopped fresh cilantro

2 tbsp soy sauce

salt and pepper to taste



Roughly chop tofu and combine in food processor with 3 cloves garlic, 1 tbsp ginger, 2 tbsp cilantro, 2 tsp rice vinegar, 1tbsp soy sauce, 1 tsp worcestershire sauce, 1 tsp sriracha, 1/2 tsp red pepper flakes. Pulse until combine. Add salt and pepper if desired. Place a small amount of filling in a dumpling wrapper, wet edges, and press together. Continue until filling is used up. Boil a pot of water with a strainer in it and cook the dumplings with a lid on it (see Pumpkin Ravioli for a visual). Set dumplings aside.

In the same pot, heat vegetable stock and 1/2 cup water. Add remaining vegetables and spices and cook until everything is heated. Remove and top with dumplings and extra hot sauce if desired. Yum!
