Happy Holidays! Sorry for the lack of posts, it’s been a busy couple of weeks. Between finals and a week of skiing I haven’t had much time to cook (let alone post). But today I have a great recipe, just in time to enjoy some gingerbread flavor over the holidays.
Remember the healthy cookie dough I posted? This is a gingerbread version. Packed with flavor, but still as healthy as before, I recommend doubling the batch because it is hard to share. Best served with hot cocoa and holiday cheer 😉
Healthy Gingerbread Cookie Dough
1 can chickpeas
1/4 cup nut butter (I use pb2)
2 tbsp vanilla
1/4 almond milk (regular milk would work too)
1/4 cup oats
1/2 a baked sweet potato
1/8 tsp salt
1 tbsp cinnamon
1 tsp ginger
1 tbsp molasses
brown sugar or baking stevia to taste
Combine all ingredients besides chocolate chips and oats in a food processor or blender and mix until combined. Place in large bowl and stir in remaining ingredients. If you can resist digging in with just your spoon, serve with crackers, gingersnaps, fruit or pretzels!
