I’m so happy that tomorrow is the 31st. There is no holiday I love more than Halloween – candy, costumes, pumpkins, little trick or treaters and not too many expectations. Dressing up will never get old, and since it’s a holiday I can eat candy corn for breakfast, right? 🙂
Pumpkin is my favorite (I’m sure you had no idea), so I had to try these No-bake Pumpkin Cookie dough Bars. Pumpkin? Cookie dough? Dark chocolate? You don’t need to say anything else. I’m in. Don’t be scared when you read the ingredients, I promise they taste amazing (I would know, my roommate and I ate a whole pan…). We made them in a pie tin, more like no-bake pumpkin pie, but the original recipe served them more like bars. Serve them how you want, I guarantee they won’t last long enough to be admired.
Pumpkin Cookie Dough No-bake Bars
1 can great northern beans
1 can pumpkin puree
1/2 cup oat flour (we ground oats up in our food processor)
1 tbsp cinnamon
1/4 tsp salt
1/4 cup dates (pitted)
3 tbsp honey (want to make this vegan? Agave is a good substitute!)
1 tbsp vanilla
2/3 cup dark chocolate chips
1 cup dates (pitted)
1 cup raw almonds
Combine 1 can beans, 1 can pumpkin puree, 1/2 cup oat flour, 1 tbsp cinnamon, 1/4 tsp salt, 1/4 cup dates, 3 tbsp honey, and 1 tbsp vanilla in a food processor or blender. Mix until combined. If the batter does not taste sweet enough, add more honey or some sugar. Stir in dark chocolate chips and set in fridge while you prepare the bottom layer.
Next, combine 1 cup dates and 1 cup almonds in your food processor and mix until combined and somewhat smooth. Remove from food processor and press it into the bottom of a 9-inch round pan. Top with pumpkin mixture and place in the fridge until ready to eat. Slice and serve (or just dig in with a fork 🙂
