Pumpkin Baked Oatmeal

Happy October!! Continuing with my pumpkin theme, today I bring you pumpkin baked oatmeal. The perfect mixture of oats, pumpkin, and spices is like having pumpkin pie for breakfast. Mix the ingredients together and pop them in the oven while you get ready for a super easy, nutritious, and warm breakfast that will help motivate you to get out of bed  in the mornings as it starts to get colder.


Pumpkin Baked Oatmeal

serves 2


1 cup quick oats

1 tsp sugar

1/2 tsp baking powder

pinch of salt

1/2 tsp nutmeg

1 tsp cinnamon

1 tsp ginger

1 cup almond milk

1/2 cup pumpkin

2 egg whites

1/2 tsp vanilla



Preheat oven to 350° F.

In a medium bowl, mix together oats, sugar, baking powder, salt, and spices.  In another bowl mix almond milk, egg white, and vanilla. Pour dry ingredients into wet and mix to combine.

Pour mixture into two small oven-safe dishes. Sprinkle with extra cinnamon. Bake for about 25 minutes. Remove from oven and serve with maple syrup, peanut butter, or eat plain! (I added chocolate pb2 to mine).

  1. hi :)i have 1question about that pumpkin, because its in ingredientes but there is not in direction, so what did you do exactly with it? you blend pumpkin, bake it and smash it….?because i cannot see, maybe i miss somewhere… 🙂
