In Minneapolis, my favorite pizza place is Galactic Pizza. They offer meat, vegetarian, vegan, and gluten-free options, and have many creative takes on your traditional pizzas. My favorite is the ‘The Alamo:’ “Tangy barbeque sauce (contains gluten), mozzarella cheese, cheddar cheese, marinated free range chicken [or mock duck], organic red onions, organic button mushrooms, and organic red bell peppers.” The mixture of the flavors, as well as the somewhat unexpected BBQ sauce, makes for a delicious meal.
When I came across the idea of creating a portobello pizza, I thought of my Galactic, and set out to create my own version of The Alamo.
Portobello BBQ Pizza
4 large portobello mushrooms
Shredded Cheese (sharp cheddar works well)
1 onion (red or yellow – whatever you have on hand)
Handful Diced Beyond Meat Grilled Chicken (substitute chicken, seitan, etc. here)
Barbecue Sauce (chose your favorite – I like Wee Willie’s)
Preheat oven to 350-400 degrees F. Chop onions and saute in a pan over medium-high heat until golden brown, remove from pan and saute mushrooms for a few minutes. Place mushrooms on baking sheet, layer sauce, onions, cheese, and fake chicken pieces, cook for approximately 10 minutes. Enjoy!
